Miche’s roatsted red pepper hummus




  • 2 cans chickpeas
  • a few pieces of roasted red pepper (about 2 whole peppers) and a bit of the juice/oil that it come packed in
  • a few glugs of olive oil
  • 1 garlic clove, crushed
  • a good tablespoon full of tahini
  • lemon juice from 1 lemon
  • 1/2-1 tsp salt (to taste)
  • 1/2-1 tsp ground cumin (to taste)

I pretty much throw everything into the blender and whiz it up until smooth.  I add seasonings and keep tasting till it’s GOOD.  Keep adding olive oil until it reaches the consistency you like.  Be creative- try sun-dried tomatoes instead of the red pepper.  Or sometimes I do a version of rachael ray’s Spinach- Artichoke Hummus by throwing in some spinach, artichokes and a bit of parmesan.  Yum!  And this is so healthy!
